Ingredients
4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp garlic powder
**Spinach Filling:**
2 cups fresh spinach, chopped
2 cloves garlic, minced
4 oz cream cheese, softened
1/4 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1 tbsp olive oil
Instructions
1. Preheat oven to 375°F (190°C).
2. In a skillet over medium heat, add olive oil and sauté garlic for 30 seconds until fragrant.
3. Add chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
4. Stir in cream cheese, Parmesan, and mozzarella until well combined.
5. Slice a pocket into the side of each chicken breast — careful not to cut all the way through.
6. Season the chicken with salt, pepper, paprika, and garlic powder.
7. Spoon the spinach mixture evenly into each pocket, securing with toothpicks if needed.
8. Heat a large oven-safe skillet with 1 tbsp olive oil over medium-high heat.
9. Sear chicken for 2–3 minutes per side until golden brown.
10. Transfer skillet to oven and bake for 15–20 minutes, or until chicken reaches 165°F (74°C).
11. Let rest for 5 minutes before serving.
