Description

Ingredients

8 large eggs

1/2 cup milk or half-and-half

2 cups fresh spinach, chopped

1/2 cup crumbled feta cheese

1/4 cup diced onion

1/4 cup diced red bell pepper

1 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp garlic powder

Cooking spray or butter for greasing


Instructions

1. Preheat oven to 375°F (190°C) and lightly grease an 8×8-inch baking dish.

2. In a skillet, heat olive oil over medium heat and sauté onion and bell pepper until softened, about 3–4 minutes.

3. Add spinach and cook until wilted, about 1–2 minutes. Remove from heat.

4. In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder.

5. Stir in the cooked vegetables and crumbled feta.

6. Pour mixture into the prepared baking dish and smooth the top.

7. Bake for 25–30 minutes, or until the eggs are set and the top is lightly golden.

8. Cool slightly before slicing and serving.

Notes

Add cooked bacon, sausage, or diced tomatoes for variety.

Great for meal prep — refrigerate leftovers and reheat in the microwave.
