Description
Creamy, cheesy spinach dip rolled up in soft tortillas and sliced into irresistible bite-sized pinwheels the perfect easy appetizer or party snack.
Ingredients
4 large flour tortillas
1 cup baby spinach, finely chopped
1/2 cup cream cheese, softened
1/2 cup sour cream
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 garlic clove, minced
1/4 tsp salt
1/4 tsp black pepper
Optional: crushed red pepper flakes for a little heat
Instructions
1. In a mixing bowl, combine cream cheese, sour cream, mozzarella, Parmesan, garlic, salt, and pepper until smooth.
2. Fold in the chopped spinach until evenly mixed.
3. Lay out the tortillas on a flat surface.
4. Spread a generous layer of the spinach mixture evenly over each tortilla.
5. Tightly roll up each tortilla and wrap in plastic wrap.
6. Refrigerate for at least 1 hour to firm up.
7. Slice each roll into 1-inch pinwheels using a sharp knife.
8. Arrange on a platter and serve chilled or at room temperature.
Notes
Add diced sun-dried tomatoes or artichokes for extra flavor.
Use whole wheat or spinach tortillas for color and texture.
Can be made a day ahead — just slice before serving to keep them fresh.
