3 ripe but firm pears, peeled, cored, and sliced

1/3 cup unsalted butter

1/2 cup brown sugar, packed

1 1/2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp ground nutmeg

1/2 cup unsalted butter, softened

3/4 cup brown sugar

2 large eggs

1 tsp vanilla extract

1/2 cup sour cream

1/4 cup milk


Instructions

1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.

2. In a small saucepan, melt 1/3 cup butter with 1/2 cup brown sugar until smooth and bubbling.

3. Pour the caramel mixture into the prepared pan and arrange pear slices neatly on top.

4. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.

5. In a large mixing bowl, cream together softened butter and 3/4 cup brown sugar until light and fluffy.

6. Beat in eggs one at a time, then add vanilla extract.

7. Stir in sour cream and milk until smooth.

8. Gradually add dry ingredients, mixing just until combined.

9. Pour the batter over the arranged pears and smooth the top.

10. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

11. Cool for 10 minutes, then carefully invert onto a serving plate.

12. Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.

Notes

Use firm pears like Bosc or Anjou for best texture.

Add a pinch of cardamom for extra aromatic warmth.

This cake tastes even better the next day as the flavors deepen.
