Description
Soft and chewy gingerbread cookies with warm spices and rich molasses flavor perfectly tender centers with lightly crisp edges, ideal for holidays or cozy winter baking.
Ingredients
3 cups all-purpose flour
3/4 tsp baking soda
1/2 tsp salt
1 tbsp ground ginger
1 tbsp ground cinnamon
1/2 tsp ground cloves
3/4 cup unsalted butter, softened
1 cup brown sugar, packed
1 large egg
1/4 cup molasses
1 tsp vanilla extract
1/4 cup granulated sugar (for rolling)
Instructions
1. In a bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
2. In a separate bowl, cream butter and brown sugar until light and fluffy.
3. Beat in egg, molasses, and vanilla until smooth.
4. Gradually add dry ingredients to wet ingredients, mixing just until combined.
5. Cover dough and chill for 1 hour.
6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
7. Roll dough into 1 1/2-inch balls and roll in granulated sugar.
8. Place cookies 2 inches apart on prepared baking sheets.
9. Bake for 9–11 minutes until set but still soft in the center.
10. Cool on baking sheet for 5 minutes, then transfer to a wire rack.
Notes
Do not overbake to keep cookies soft.
Cookies firm up slightly as they cool.
Store in an airtight container for up to one week.
