Ingredients
1 cup unsalted butter, softened
1/2 cup powdered sugar (plus more for coating)
2 tsp vanilla extract
2 1/4 cups all-purpose flour
1/4 tsp salt
1 cup finely chopped pecans
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, beat butter and powdered sugar until light and fluffy.
3. Mix in vanilla extract.
4. Gradually add flour and salt, stirring until a soft dough forms.
5. Fold in chopped pecans until evenly distributed.
6. Shape dough into 1-inch balls and place on the prepared baking sheet.
7. Bake for 12–15 minutes, or until bottoms are lightly golden.
8. Cool for 5 minutes, then roll warm cookies in powdered sugar.
9. Once fully cooled, roll again in powdered sugar for a snowy finish.
Notes
For extra flavor, lightly toast the pecans before adding them to the dough.
