- 1 onion, sliced

- 1 bell pepper, sliced

Instructions
- Prepare the chicken: Start by placing the chicken thighs or breasts in the bottom of your slow cooker.
- Mix the sauce: In a medium-sized bowl, mix together the sweet chili sauce, soy sauce, sliced onion, minced garlic, and sliced bell pepper.
- Combine ingredients: Pour the sauce mixture evenly over the chicken in the slow cooker.
- Season it up: Season with salt and pepper to taste.
- Cook: Cover your slow cooker and cook on low for 360 minutes, or on high for 240 minutes.
- Shred the chicken: Once the cooking time is up, use two forks to shred the chicken right in the slow cooker.
- Serve: Serve the sweet chili chicken over rice or noodles with some of the sauce spooned on top.
Notes
For a spicier version, adjust the amount of sweet chili sauce or add chili flakes. Garnish with green onions or sesame seeds for extra flavor.
