  • 1 lb boneless chicken breasts
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup chopped celery
  • 1 cup chopped bell peppers (any color)
  • 1 cup chopped onion
  • 1 cup chicken broth
  • 1/2 cup buffalo sauce
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Chopped green onions and cheese for serving (optional)

Instructions

  1. Begin by placing the boneless chicken breasts in the bottom of your slow cooker.
  2. Next, pour in the drained and rinsed kidney beans and black beans.
  3. Add the can of diced tomatoes along with their juices.
  4. Toss in the chopped celery, bell peppers, and onion.
  5. Pour in chicken broth and buffalo sauce.
  6. Sprinkle in garlic powder, cumin, and season with salt and pepper to taste.
  7. Stir everything together with a spoon until well mixed.
  8. Cover the slow cooker and set it to cook on low for 6-8 hours or high for 3-4 hours.
  9. About 30 minutes before serving, shred the chicken right in the slow cooker.
  10. Serve hot, topped with chopped green onions and cheese, if desired.
