- 1 lb boneless chicken breasts
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup chopped celery
- 1 cup chopped bell peppers (any color)
- 1 cup chopped onion
- 1 cup chicken broth
- 1/2 cup buffalo sauce
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
- Chopped green onions and cheese for serving (optional)
Instructions
- Begin by placing the boneless chicken breasts in the bottom of your slow cooker.
- Next, pour in the drained and rinsed kidney beans and black beans.
- Add the can of diced tomatoes along with their juices.
- Toss in the chopped celery, bell peppers, and onion.
- Pour in chicken broth and buffalo sauce.
- Sprinkle in garlic powder, cumin, and season with salt and pepper to taste.
- Stir everything together with a spoon until well mixed.
- Cover the slow cooker and set it to cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, shred the chicken right in the slow cooker.
- Serve hot, topped with chopped green onions and cheese, if desired.
