Description
This Slow Cooker Beef Stew is hearty, comforting, and packed with tender chunks of beef, potatoes, carrots, and a rich, savory broth the perfect cozy meal for chilly days.
Ingredients
2 lbs beef stew meat, cut into 1-inch cubes
3 tbsp flour
1 tbsp olive oil
4 cups beef broth
2 cups potatoes, peeled and diced
2 cups carrots, sliced
1 onion, chopped
2 garlic cloves, minced
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
1 cup frozen peas (added at the end)
Instructions
1. Toss beef pieces in flour to coat lightly.
2. Heat olive oil in a skillet and brown the beef on all sides; transfer to the slow cooker.
3. Add potatoes, carrots, onion, and garlic to the slow cooker.
4. Stir in beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
5. Cover and cook on low for 7–8 hours or on high for 4–5 hours, until beef and vegetables are tender.
6. Stir in frozen peas during the last 15 minutes of cooking.
7. Serve hot, garnished with fresh parsley if desired.
Notes
For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir in during the last 30 minutes.
Add mushrooms, celery, or turnips for extra flavor and texture.
Leftovers taste even better the next day — perfect for meal prep or freezing.
