- 2 pounds beef chuck, cut into cubes
- 1 can (14 oz) coconut milk
- 2 tablespoons curry powder
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch piece of ginger, grated
- 2 carrots, sliced
- 1 bell pepper, chopped
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Prepare the Ingredients: Start by cutting the beef chuck into bite-sized cubes.
- Combine in Slow Cooker: In a slow cooker, combine the beef, chopped onion, minced garlic, grated ginger, sliced carrots, and chopped bell pepper.
- Add Coconut Milk: Pour the can of coconut milk over the meat and vegetables.
- Season the Mixture: Add curry powder, soy sauce, brown sugar, salt, and pepper.
- Stir to Combine: Carefully stir all the ingredients in the slow cooker.
- Set for Cooking: Cover the slow cooker and set it for 6-8 hours on low or 3-4 hours on high.
- Garnish and Serve: Once cooked, garnish with fresh cilantro and serve hot.
