  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prepare the Ingredients: Start by cutting the beef chuck into bite-sized cubes.
  2. Combine in Slow Cooker: In a slow cooker, combine the beef, chopped onion, minced garlic, grated ginger, sliced carrots, and chopped bell pepper.
  3. Add Coconut Milk: Pour the can of coconut milk over the meat and vegetables.
  4. Season the Mixture: Add curry powder, soy sauce, brown sugar, salt, and pepper.
  5. Stir to Combine: Carefully stir all the ingredients in the slow cooker.
  6. Set for Cooking: Cover the slow cooker and set it for 6-8 hours on low or 3-4 hours on high.
