Description

A quick and healthy dish featuring chicken and zucchini, perfect for busy weeknights.


Ingredients

  • 2 chicken breasts, sliced
  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish

Instructions

  1. Heat olive oil in a large skillet or wok over medium heat.
  2. Cook the sliced chicken breasts, seasoning with salt and pepper, for 5-7 minutes until golden brown.
  3. Add minced garlic and zucchini, cooking for another 5 minutes until the zucchini is soft but slightly crisp.
  4. Pour in soy sauce and stir to coat, cooking for an additional minute.
  5. Serve hot, optionally garnished with sesame seeds.

Notes

This stir fry can easily be modified with other vegetables or proteins. Great served over rice or noodles.
