Description
A bright and refreshing shrimp salad bursting with sweet mango, juicy pineapple, crisp vegetables, and a tangy citrus dressing a tropical-inspired dish that’s light yet satisfying.
Ingredients
1 lb cooked shrimp, peeled and deveined
1 ripe mango, diced
1 cup fresh pineapple, diced
1 red bell pepper, diced
1/2 small red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 avocado, diced (optional)
2 cups mixed greens or chopped romaine
**Dressing:**
3 tbsp lime juice
2 tbsp olive oil
1 tbsp honey (or agave for vegan)
1/2 tsp chili powder
Salt and pepper to taste
Instructions
1. In a large mixing bowl, combine shrimp, mango, pineapple, bell pepper, onion, and cilantro.
2. In a small bowl, whisk together lime juice, olive oil, honey, chili powder, salt, and pepper.
3. Pour the dressing over the salad and toss gently to coat.
4. Add avocado and mixed greens right before serving and toss lightly.
5. Serve chilled or at room temperature.
Notes
For extra flavor, grill the shrimp before adding to the salad.
Use canned pineapple (drained) if fresh isn’t available.
Delicious served in lettuce wraps or over quinoa for a hearty meal.
