Description

A hearty and flavorful shrimp baked potato loaded with juicy Cajun-seasoned shrimp, melted cheese, and a creamy garlic butter sauce  the perfect comfort meal with a coastal twist.


Ingredients

4 large russet potatoes

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

1 tbsp Cajun seasoning

2 tbsp unsalted butter

2 garlic cloves, minced

1/4 cup heavy cream

1/2 cup shredded cheddar cheese

2 green onions, sliced

Salt and pepper to taste

Sour cream for topping (optional)


Instructions

1. Preheat oven to 400°F (200°C). Scrub potatoes clean, pierce with a fork several times, and bake for 50–60 minutes until tender.

2. While potatoes bake, season shrimp with olive oil, Cajun seasoning, salt, and pepper.

3. Heat a skillet over medium heat and cook shrimp for 2–3 minutes per side until pink and cooked through. Remove and set aside.

4. In the same skillet, melt butter and sauté garlic until fragrant. Add heavy cream and stir to make a light sauce.

5. When potatoes are done, cut a slit across the top and gently fluff the insides with a fork.

6. Top each potato with shredded cheddar cheese and return to the oven for 2–3 minutes to melt.

7. Spoon shrimp and sauce over the cheesy potatoes.

8. Garnish with green onions and a dollop of sour cream if desired.

9. Serve hot and enjoy!

Notes

For extra flavor, sprinkle crispy chicken bits or a drizzle of hot sauce on top.

Substitute Cajun seasoning with lemon pepper for a milder version.

Use sweet potatoes for a deliciously different twist.
