Description
A quick and savory stir-fry featuring tender shiitake mushrooms and fluffy scrambled eggs tossed in a fragrant soy-garlic sauce a simple, protein-packed dish perfect for any meal of the day.
Ingredients
2 cups fresh shiitake mushrooms, sliced
4 large eggs
1 tbsp soy sauce
1 tsp sesame oil
2 tbsp vegetable oil, divided
2 garlic cloves, minced
2 green onions, sliced
1/2 tsp grated ginger
Salt and pepper to taste
Cooked jasmine rice for serving (optional)
Instructions
1. In a small bowl, whisk the eggs with a pinch of salt and set aside.
2. Heat 1 tablespoon of vegetable oil in a wok or skillet over medium-high heat.
3. Add the shiitake mushrooms and cook for 4–5 minutes until tender and lightly browned.
4. Add garlic and ginger; sauté for 30 seconds until fragrant.
5. Push mushrooms to one side of the pan, add the remaining oil, and pour in the beaten eggs.
6. Let the eggs set slightly, then gently scramble and mix with the mushrooms.
7. Stir in soy sauce and sesame oil, tossing to coat evenly.
8. Season with salt and pepper to taste.
9. Top with sliced green onions and serve hot over rice if desired.
Notes
For extra umami flavor, add a splash of oyster sauce or sprinkle of toasted sesame seeds.
You can substitute shiitake with cremini or button mushrooms.
This dish is great for breakfast, lunch, or a quick dinner with steamed rice.
