Description
A colorful and aromatic Spanish seafood paella loaded with shrimp, mussels, and calamari infused with saffron, paprika, and fresh herbs for a stunning one-pan meal.
Ingredients
2 tbsp olive oil
1 onion, finely chopped
3 garlic cloves, minced
1 red bell pepper, diced
2 cups short-grain rice (like bomba or arborio)
1/4 tsp saffron threads, soaked in 2 tbsp warm water
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
4 cups seafood or chicken broth (warm)
1/2 lb shrimp, peeled and deveined
1/2 lb mussels, cleaned and debearded
1/2 lb calamari rings
1/2 cup frozen peas
1 lemon, cut into wedges
2 tbsp chopped parsley for garnish
Instructions
1. Heat olive oil in a large wide skillet or paella pan over medium heat.
2. Add onion, garlic, and bell pepper; sauté for 3–4 minutes until softened.
3. Stir in rice, saffron (with its soaking liquid), paprika, salt, and pepper.
4. Pour in the warm broth and bring to a simmer.
5. Reduce heat to low and cook uncovered for about 15 minutes, without stirring.
6. Arrange shrimp, mussels, and calamari on top of the rice.
7. Continue cooking for another 10 minutes, until seafood is cooked and rice is tender.
8. Sprinkle peas over the top and cover for 5 minutes to steam.
9. Remove from heat, let rest for 5 minutes, garnish with parsley, and serve with lemon wedges.
Notes
Use a combination of your favorite seafood such as clams or scallops.
Avoid stirring once the broth is added to form the traditional crispy bottom (socarrat).
Add a pinch of chili flakes for a spicier version.
