Description
Rich, chewy blondies infused with espresso and studded with buttery toffee bits finished with a sprinkle of flaky sea salt for the perfect sweet-salty bite.
Ingredients
1 cup unsalted butter, melted and slightly cooled
1 1/4 cups brown sugar, packed
1/2 cup granulated sugar
2 large eggs
2 tsp vanilla extract
2 tsp instant espresso powder
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 cup toffee bits
Flaky sea salt, for topping
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
2. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
3. Add eggs, vanilla extract, and espresso powder, whisking until fully combined.
4. In a separate bowl, whisk together flour, baking powder, and salt.
5. Gradually stir dry ingredients into the wet mixture until just combined — do not overmix.
6. Fold in toffee bits evenly throughout the batter.
7. Spread the batter into the prepared pan and smooth the top.
8. Bake for 25–30 minutes, or until golden and a toothpick inserted in the center comes out mostly clean.
9. Sprinkle flaky sea salt over the top while still warm.
10. Cool completely before slicing into squares.
Notes
For extra espresso flavor, drizzle with an espresso glaze or add espresso chips.
Store blondies in an airtight container for up to 5 days.
