  • 2 cups cooked shredded chicken (rotisserie recommended)
  • 1 cup sour cream
  • 0.75 cup salsa verde
  • 8 small corn tortillas (6-inch)
  • 2 cups chopped tomatoes
  • 2 cups shredded Pepper Jack or Monterey Jack cheese
  • 0.25 cup fresh cilantro, chopped
  • Avocado slices (for garnish)
  • Green onions (for garnish)
  • Lime wedges (for garnish)
  • Extra salsa (optional toppings)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare an 8×8-inch or 9×9-inch baking dish by lightly greasing it.
  3. Mix together the sour cream and salsa verde in a bowl until smooth.
  4. Layer 4 tortillas in the bottom of the baking dish.
  5. Spread half of the sauce over the tortillas, then layer half of the chicken, tomatoes, cilantro, and cheese.
  6. Repeat with the remaining tortillas and ingredients.
  7. Bake uncovered for 20-25 minutes until bubbly and golden.
  8. Let the casserole rest for 5 minutes before serving.
  9. Garnish with avocado, lime wedges, green onions, and extra salsa if desired.

Notes

Use shredded rotisserie chicken for a quicker option. Fresh ingredients enhance the flavor. Adjust spice levels with different brands of salsa verde.
