Ingredients
2 cups cooked sushi rice
2 tbsp rice vinegar
1 tbsp sugar
1/2 tsp salt
8 oz cooked salmon (baked or canned), flaked
1/4 cup mayonnaise
2 tbsp sriracha (adjust to spice level)
1 tsp soy sauce
1 tsp sesame oil
1/2 cup cream cheese, softened
2 green onions, chopped

Instructions
1. Preheat oven to 400°F (200°C) and lightly grease an 8×8-inch baking dish.
2. In a bowl, mix warm cooked rice with rice vinegar, sugar, and salt. Spread evenly across the bottom of the baking dish.
3. In another bowl, combine flaked salmon, mayonnaise, sriracha, soy sauce, sesame oil, and cream cheese until smooth and creamy.
4. Spread the salmon mixture evenly over the rice.
5. Bake uncovered for 12–15 minutes, or until heated through and slightly golden on top.

7. Serve warm with small nori strips for scooping, or enjoy with a spoon.
Notes
Use canned tuna instead of salmon for a budget-friendly variation.
Add a drizzle of eel sauce or extra spicy mayo before serving.
Best served fresh, but leftovers can be reheated in the oven or air fryer.
