Description
Crispy on the outside and tender on the inside, these roasted baby potatoes are tossed with olive oil, garlic, and fresh herbs a simple yet flavorful side dish for any meal.
Ingredients
1 1/2 lbs baby potatoes, halved
2 tbsp olive oil
2 garlic cloves, minced
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme (or 1 tbsp fresh thyme)
1 tsp dried rosemary (or 1 tbsp fresh rosemary)
1 tbsp chopped fresh parsley (for garnish)
Optional: pinch of paprika or chili flakes for extra flavor
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a large bowl, toss halved baby potatoes with olive oil, garlic, salt, pepper, thyme, and rosemary until evenly coated.
3. Spread potatoes in a single layer on the prepared baking sheet, cut side down.
4. Roast for 25–30 minutes, stirring halfway through, until golden brown and crispy.
5. Remove from oven and sprinkle with fresh parsley.
6. Serve hot as a side dish to your favorite main course.
Notes
For ultra-crispy potatoes, preheat the baking sheet in the oven before adding the potatoes.
You can substitute baby potatoes with fingerlings or small Yukon Golds.
Add a squeeze of lemon juice before serving for a bright, fresh touch.
