- 4 cups rhubarb, chopped
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour (for the topping)
- 1 cup rolled oats
- 1 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon cinnamon
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the chopped rhubarb, granulated sugar, 2 tablespoons of flour, and vanilla extract.
- Pour the rhubarb mixture into a greased 9×13-inch baking dish and spread evenly.
- In another bowl, mix together the 1 cup of flour, rolled oats, brown sugar, melted butter, cinnamon, and a pinch of salt until crumbly.
- Sprinkle the topping evenly over the rhubarb mixture.
- Place the baking dish in the preheated oven and bake for 40-45 minutes.
- Allow to cool slightly before serving.
