Description

A delightful dessert that combines tart rhubarb with a sweet and crunchy topping, perfect for any gathering.


Ingredients

  • 4 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (for the topping)
  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the chopped rhubarb, granulated sugar, 2 tablespoons of flour, and vanilla extract.
  3. Pour the rhubarb mixture into a greased 9×13-inch baking dish and spread evenly.
  4. In another bowl, mix together the 1 cup of flour, rolled oats, brown sugar, melted butter, cinnamon, and a pinch of salt until crumbly.
  5. Sprinkle the topping evenly over the rhubarb mixture.
  6. Place the baking dish in the preheated oven and bake for 40-45 minutes.
  7. Allow to cool slightly before serving.
