Rich, fudgy brownies topped with a tangy-sweet raspberry frosting perfect for chocolate lovers.
Ingredients
Brownies:
1/2 cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 tsp salt
1/4 tsp baking powder
Raspberry Frosting:
1/4 cup unsalted butter, softened
1 cup powdered sugar
2–3 tbsp raspberry puree or seedless jam
1/2 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and grease an 8×8-inch pan.
2. Mix melted butter and sugar; beat in eggs and vanilla.
3. Stir in cocoa, flour, salt, and baking powder until smooth.
4. Pour batter into pan; bake 20–25 minutes until toothpick comes out mostly clean; cool completely.
5. Beat butter and powdered sugar for frosting; mix in raspberry puree and vanilla.
6. Spread frosting over cooled brownies; slice and serve.
Notes
Use fresh or frozen raspberries for puree.
For extra fudginess, slightly underbake the brownies.
Store in an airtight container at room temperature up to 3 days.
