Description
Creamy, tangy raspberry cheesecake bars with a buttery graham cracker crust and a luscious swirl of raspberry sauce a perfect make-ahead dessert for any occasion.
Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/4 cup sour cream
1/3 cup raspberry jam or preserves
Fresh raspberries for garnish (optional)
Instructions
1. Preheat the oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until evenly coated.
3. Press the crust mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then set aside to cool slightly.
4. In a large bowl, beat cream cheese and 3/4 cup sugar until smooth and creamy.
5. Add eggs one at a time, beating after each addition, then mix in vanilla and sour cream until well combined.
6. Pour the cheesecake batter over the cooled crust and spread evenly.
7. Warm raspberry jam slightly and spoon small dollops over the batter. Use a knife to swirl the jam into the cheesecake.
8. Bake for 35–40 minutes, or until the center is just set and slightly jiggly.
9. Cool completely, then refrigerate for at least 3 hours or overnight.
10. Lift out of the pan using parchment paper, slice into bars, and garnish with fresh raspberries if desired.
Notes
For a lighter flavor, try using strawberry or blueberry jam instead of raspberry.
Make sure the cream cheese is fully softened for a smooth, lump-free texture.
Bars can be refrigerated for up to 5 days or frozen for up to a month.
