Description

A vibrant and healthy meal packed with colorful vegetables and fresh herbs, perfect for lunch or as an appetizer.


Ingredients

  • Rice paper wrappers
  • Bell peppers (various colors)
  • Carrots
  • Cucumber
  • Avocado
  • Fresh herbs (mint, cilantro, basil)
  • Peanut butter
  • Soy sauce
  • Lime juice
  • Water

Instructions

  1. Prepare the Veggies: Start by washing all your vegetables thoroughly. For the bell peppers, julienne them. Cut off the tops and bottoms, remove the seeds and core, and slice them into thin strips. Peel the carrots and julienne them the same way. Wash and thinly slice the cucumber, and slice the avocado into thin pieces.
  2. Make the Peanut Sauce: In a small bowl, scoop out a portion of peanut butter. Add soy sauce and lime juice, and mix until smooth.
  3. Soak the Rice Paper: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10 to 15 seconds until soft.
  4. Assemble the Rolls: Lay the softened wrapper flat on a clean surface. On the lower third, place a handful of veggies and fresh herbs.
  5. Roll It Up: Fold the sides of the wrapper over the filling, and gently but tightly roll it from the bottom to the top. Repeat with the remaining wrappers.
  6. Serve and Enjoy: Serve your rolls with the peanut sauce on the side.

Notes

Best enjoyed fresh. Store in the refrigerator for 1-2 days with parchment paper between rolls.
