Description

Ingredients

2 medium potatoes, peeled and diced

1 small onion, finely chopped

1/4 cup milk

1/2 cup shredded cheddar cheese

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley for garnish


Instructions

1. Preheat oven to 375°F (190°C).

2. In a medium skillet, heat olive oil over medium heat.

3. Add diced potatoes and cook until tender and lightly golden, about 10 minutes.

4. Add chopped onion and cook until softened.

5. In a bowl, whisk together eggs, milk, salt, and pepper.

6. Pour the egg mixture over the potatoes and onions, tilting the pan to distribute evenly.

7. Cook on the stovetop for 3–4 minutes until edges begin to set.

8. Sprinkle cheese on top and transfer the skillet to the oven.

9. Bake for 10–12 minutes, or until eggs are fully set and the top is golden.

10. Remove from oven, let cool slightly, garnish with parsley, and serve warm.

Notes

You can add cooked bacon, spinach, or mushrooms for extra flavor.
