Ingredients
1 can (20 oz) crushed pineapple, drained
2 1/2 cups vanilla wafer crumbs (about 1 box)
1 cup sweetened shredded coconut, plus extra for rolling
1 cup powdered sugar
1/2 tsp vanilla extract
Pinch of salt
Instructions
1. In a large bowl, combine drained crushed pineapple, vanilla wafer crumbs, coconut, powdered sugar, vanilla extract, and salt.
2. Mix until the mixture is thick enough to hold together; if it’s too wet, add more wafer crumbs.
3. Scoop and roll into 1-inch balls using your hands or a small cookie scoop.
4. Roll each ball in extra shredded coconut to coat evenly.
5. Place the balls on a baking sheet lined with parchment paper.
6. Refrigerate for at least 1 hour before serving to firm up.
7. Store in an airtight container in the refrigerator.
Notes
You can dip the balls halfway in melted white chocolate for a pretty holiday look.
Try adding chopped pecans or a pinch of nutmeg for extra flavor.
