A creamy Southern classic made with sharp cheddar, cream cheese, and diced pimentos. Perfect as a party dip, sandwich spread, or cracker topper!
Ingredients
8 oz cream cheese, softened
1 cup shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
1 (4 oz) jar diced pimentos, drained
1/4 cup mayonnaise
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 tsp smoked paprika
Salt and black pepper to taste
Optional: 1–2 tsp hot sauce
Instructions
1. In a mixing bowl, beat the softened cream cheese until smooth.
2. Add mayonnaise and mix until fully combined.
3. Stir in cheddar, Monterey Jack, and diced pimentos.
4. Season with garlic powder, onion powder, smoked paprika, salt, and pepper.
5. Add hot sauce if desired for extra kick.
6. Chill for at least 30 minutes before serving.
7. Serve with crackers, chips, veggies, or use as a spread for sandwiches.
Notes
For a spicier version, add diced jalapeños or extra hot sauce.
Keeps well in the refrigerator for up to 4 days.
Great in grilled cheese or stuffed into celery sticks.
