  • 1 tsp pure vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda

  • 1.5 cups mashed overripe bananas (about 34 large bananas)
  • 1 cup chopped walnuts or pecans, toasted
  • 0.5 tsp ground cinnamon (optional)

Instructions

  1. Toast the nuts in a dry skillet or oven until golden and cool them.
  2. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  3. Mix the melted butter and sugar in a large bowl until combined.
  4. Add the egg and vanilla extract, beating until smooth.
  5. Fold in the mashed bananas gently.
  6. Sift together flour, baking soda, salt, and cinnamon.
  7. Combine the dry ingredients with the wet mixture without over-mixing.
  8. Add ¾ cup of the toasted nuts and mix in, reserving ¼ cup for topping.
  9. Bake in the preheated oven for about 55–65 minutes, or until a toothpick comes out clean.
  10. Cool the bread in the pan for 10 minutes before transferring it to a wire rack.
