Ingredients
4 large carrots, grated
1 tbsp fresh ginger, finely grated
2 tbsp honey
2 tbsp lemon juice
1 tbsp apple cider vinegar
2 tbsp olive oil
1 tsp Dijon mustard
1/4 tsp smoked paprika
Salt and pepper, to taste
2 tbsp chopped fresh parsley
Optional: 1 tbsp chopped candied ginger or crushed walnuts for garnish
Instructions
1. In a small bowl, whisk together honey, lemon juice, apple cider vinegar, olive oil, Dijon mustard, smoked paprika, salt, and pepper until well blended.
2. Place grated carrots in a large bowl and add the grated ginger.
3. Pour the dressing over the carrots and toss to coat evenly.
4. Let the salad sit for at least 10 minutes to allow flavors to meld.
5. Sprinkle with fresh parsley and optional toppings like candied ginger or walnuts before serving.
Notes
For extra immune support, add a pinch of turmeric or cayenne.
