Ingredients

- 200 g chocolate cookies or biscuits, crushed
- 4 tbsp melted butter
- 1 cup cold heavy cream
- 1/2 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 120 g dark or milk chocolate, chopped
- 1/2 cup heavy cream for ganache
Instructions
- Mix the crushed cookies with melted butter and press into the bottom of a 20 cm springform pan. Refrigerate for 15 minutes.
- Whip the cold heavy cream until soft peaks form. In another bowl, mix peanut butter, powdered sugar, and vanilla, then fold in the whipped cream. Spread over the chilled cookie base and refrigerate for 30 minutes.
- Heat 1/2 cup of heavy cream and pour over chopped chocolate. Stir until smooth and glossy. Pour ganache over the mousse and smooth the top.
- Chill the cake in the refrigerator for 2-3 hours or freeze for 1 hour until set.
- When ready to serve, run a warm knife around the edge of the pan to release, slice, and serve with optional toppings.
