Description
A sweet and spicy homemade Peach Pepper Jelly made with fresh peaches, bell peppers, and a hint of jalapeño. Perfect as a glaze for meats, over cream cheese with crackers, or as a vibrant gift for the holidays.
Ingredients
3 cups finely chopped fresh peaches (about 4–5 peaches)
1 cup finely chopped red bell pepper
1–2 jalapeños, seeded and finely diced
1/2 cup apple cider vinegar
1 package (1.75 oz) powdered fruit pectin
5 cups granulated sugar
Instructions
1. In a large pot, combine peaches, bell pepper, jalapeños, and vinegar. Bring to a boil over medium-high heat, stirring occasionally.
2. Add the fruit pectin and stir constantly for 1 minute.
3. Gradually stir in sugar, return to a rolling boil, and cook for 2–3 minutes, stirring constantly.
4. Remove from heat and skim off any foam.
5. Immediately ladle hot jelly into sterilized jars, leaving 1/4-inch headspace.
6. Wipe rims clean, seal with lids and bands, and process in a boiling water bath for 10 minutes.
7. Let jars cool completely. Store in a cool, dark place or refrigerate after opening.
Notes
For extra heat, leave some jalapeño seeds in.
Try mixing in a touch of lemon juice for a brighter flavor.
Serve over cream cheese with crackers, as a chicken glaze, or brushed on grilled shrimp for a sweet-spicy kick.
