Description
Fluffy bite-sized pancake poppers that are perfect for breakfast or snacking crisp on the edges, soft inside, and easy to customize with your favorite fillings like chocolate chips, berries, or Nutella.
Ingredients
1 cup all-purpose flour
2 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup buttermilk
1 large egg
1 tbsp melted butter
1 tsp vanilla extract
Butter or oil for cooking
Optional fillings: chocolate chips, blueberries, diced strawberries, or Nutella
Instructions
1. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
2. In another bowl, combine buttermilk, egg, melted butter, and vanilla extract.
3. Pour the wet ingredients into the dry and stir until just combined (batter should be slightly lumpy).
4. Preheat a mini muffin pan or cake pop maker and lightly grease with butter or oil.
5. Spoon small amounts of batter into each cavity, adding a bit of your chosen filling in the center.
6. Cook until golden brown on the edges and cooked through (about 2–3 minutes per side if flipping).
7. Remove and let cool slightly before serving.
8. Serve warm with maple syrup, powdered sugar, or fruit sauce.
Notes
For extra crispness, brush with a little melted butter right after cooking.
Store leftovers in an airtight container and reheat in the oven or air fryer.
