Ingredients

  • 2 grilled chicken breasts, sliced
  • 4 cups mixed greens (spinach, romaine, arugula)
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup bacon, cooked and crumbled
  • 1/4 cup blue cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Start by grilling the chicken breasts. You can season them with salt and pepper before placing them on the grill. Grill each side for about 6-7 minutes or until the internal temperature reaches 165°F (75°C). Once cooked, remove them from the grill and let them rest for a few minutes. Then, slice the chicken into strips.
  2. In a large salad bowl, combine the mixed greens, sliced grilled chicken, diced avocado, halved cherry tomatoes, crumbled bacon, blue cheese, and thinly sliced red onion.
  3. To make the dressing, take a small bowl and whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper. Taste it and adjust the seasonings as needed. The dressing should be tangy with a hint of sweetness.
