A cozy and satisfying one-pot creamy vegetable soup filled with tender vegetables, hearty potatoes, and a velvety broth perfect for a wholesome, comforting meal any night of the week.
Ingredients
2 tbsp olive oil
1 medium onion, diced
2 carrots, sliced
2 celery stalks, chopped
3 garlic cloves, minced
2 medium potatoes, peeled and diced
1 zucchini, chopped
1 cup green beans, trimmed and cut
4 cups vegetable broth
1 cup milk or cream
2 tbsp all-purpose flour
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
1/2 tsp dried basil
1 cup frozen peas
1/4 cup chopped parsley
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion, carrots, and celery; sauté for 5 minutes until softened.
3. Stir in garlic and cook for 1 minute until fragrant.
4. Add potatoes, zucchini, green beans, broth, thyme, basil, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 15–20 minutes until vegetables are tender.
6. In a small bowl, whisk milk and flour together until smooth.
7. Slowly pour mixture into the soup while stirring to thicken.
8. Add frozen peas and cook for another 5 minutes.
9. Stir in parsley, adjust seasoning, and serve warm.
Notes
For a vegan version, use plant-based milk and skip cream.
Blend half the soup for a thicker, creamier texture.
Add a handful of spinach or kale at the end for extra greens.
