Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 zucchini, diced
- 1 cup green beans, chopped
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Cook the chopped onion until translucent, about 3-4 minutes.
- Add the minced garlic and cook for 1 minute.
- Stir in the sliced carrots and chopped celery. Cook for about 5 minutes.
- Add the diced zucchini and chopped green beans. Cook for another 3-4 minutes.
- Pour in the vegetable broth and bring to a boil.
- Simmer for about 20 minutes over low heat.
- Stir in the heavy cream, thyme, basil, salt, and pepper.
- Allow to simmer for another 5 minutes.
- Serve hot, garnished with fresh parsley.
Notes
Chop vegetables uniformly for even cooking. Use fresh seasonal vegetables for the best flavor.
