One Pot Creamy Vegetable Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Cook the chopped onion until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for 1 minute.
  4. Stir in the sliced carrots and chopped celery. Cook for about 5 minutes.
  5. Add the diced zucchini and chopped green beans. Cook for another 3-4 minutes.
  6. Pour in the vegetable broth and bring to a boil.
  7. Simmer for about 20 minutes over low heat.
  8. Stir in the heavy cream, thyme, basil, salt, and pepper.
  9. Allow to simmer for another 5 minutes.
  10. Serve hot, garnished with fresh parsley.

Notes

Chop vegetables uniformly for even cooking. Use fresh seasonal vegetables for the best flavor.
