Ingredients

  • 2 chicken breasts
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. Begin by taking a large skillet and placing it on medium heat. Add the tablespoon of olive oil to the pan. Give the oil a moment to heat up.
  2. Season the chicken breasts with salt and pepper on both sides. Once the oil is hot, gently place the chicken in the skillet. Cook for about 5-7 minutes on each side, or until browned and cooked through.
  3. Remove the chicken from the pan and set it aside on a plate. In the same skillet, add the minced garlic and sauté for about one minute until fragrant.
  4. Stir in the rice and pour the chicken broth into the skillet. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and cover the skillet. Cook for about 15-20 minutes until the rice is tender.
  5. Slice the cooled chicken into bite-sized pieces.
  6. Stir in the heavy cream and grated Parmesan cheese into the rice mixture. Cook for an additional 5 minutes until creamy.
  7. Garnish the dish with fresh parsley before serving.
