- 2 chicken breasts
- 1 cup rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions
- Begin by taking a large skillet and placing it on medium heat. Add the tablespoon of olive oil to the pan. Give the oil a moment to heat up.
- Season the chicken breasts with salt and pepper on both sides. Once the oil is hot, gently place the chicken in the skillet. Cook for about 5-7 minutes on each side, or until browned and cooked through.
- Remove the chicken from the pan and set it aside on a plate. In the same skillet, add the minced garlic and sauté for about one minute until fragrant.
- Stir in the rice and pour the chicken broth into the skillet. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and cover the skillet. Cook for about 15-20 minutes until the rice is tender.
- Slice the cooled chicken into bite-sized pieces.
- Stir in the heavy cream and grated Parmesan cheese into the rice mixture. Cook for an additional 5 minutes until creamy.
- Garnish the dish with fresh parsley before serving.
