Description
Classic no-bake cookies made with rich cocoa, creamy peanut butter, oats, and butterĀ chewy, fudgy, and ready in minutes with no oven required.
Ingredients
1/2 cup (1 stick) unsalted butter
2 cups granulated sugar
1/2 cup milk
1/4 cup unsweetened cocoa powder
1/2 cup creamy peanut butter
2 tsp vanilla extract
3 cups quick oats
Pinch of salt
Instructions
1. In a medium saucepan over medium heat, combine butter, sugar, milk, and cocoa powder.
2. Bring to a rolling boil and cook for 1 minute, stirring constantly.
3. Remove from heat and stir in peanut butter, vanilla extract, and salt until smooth.
4. Add oats and stir until fully coated.
5. Using a spoon or cookie scoop, drop spoonfuls onto parchment paper.
6. Let cookies cool and set at room temperature for about 30 minutes.
7. Once firm, store in an airtight container.
Notes
Use old-fashioned oats for a chewier texture.
For richer flavor, add a pinch of espresso powder to the cocoa mixture.
These cookies set faster when chilled in the refrigerator.
