Description
No-bake coconut cream balls are rich, creamy, and sweet made with shredded coconut, condensed milk, and white chocolate for a simple treat that tastes like coconut truffles.
Ingredients
2 cups shredded sweetened coconut
1/2 cup sweetened condensed milk
1/2 tsp vanilla extract
1 tbsp melted butter
1 cup white chocolate chips (for coating)
1 tbsp coconut oil (optional, for melting chocolate)
Extra shredded coconut for rolling (optional)
Instructions
1. In a mixing bowl, combine shredded coconut, condensed milk, vanilla extract, and melted butter.
2. Mix until a thick, sticky dough forms.
3. Scoop small portions (about 1 tablespoon each) and roll into balls.
4. Place on a parchment-lined tray and chill in the freezer for 20–30 minutes.
5. Meanwhile, melt white chocolate chips with coconut oil in a microwave or double boiler until smooth.
6. Dip each chilled coconut ball into melted chocolate, coating evenly.
7. Place back on parchment paper and sprinkle with extra coconut if desired.
8. Refrigerate until set, about 15 minutes, and enjoy chilled.
Notes
Store in an airtight container in the fridge for up to a week.
You can substitute dark or milk chocolate for the coating.
Add a roasted almond inside each ball for a ‘Raffaello-style’ twist.
