- 1 lb chicken breast (diced)
- 2 cups broccoli florets (fresh)
- 2 cups mushrooms (sliced)
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp olive oil
- 1 tsp cornstarch
- 2 tbsp water
- Salt (to taste)
- Pepper (to taste)
Instructions
- Cook the rice according to the package instructions and set aside.
- Prepare the chicken by heating olive oil in a skillet and cooking the diced chicken for 5-7 minutes until golden brown.
- Sauté the chopped onion and minced garlic in the skillet with sesame oil for 1-2 minutes until fragrant.
- Add the broccoli florets and sliced mushrooms, stirring for about 3-5 minutes until tender-crisp.
- Combine the cooked chicken with the vegetables and pour in the soy sauce.
- Thicken the sauce by mixing cornstarch with water and adding it to the skillet until the sauce thickens, about 1-2 minutes.
- Serve the stir-fry over cooked rice, garnishing with sesame seeds or green onions if desired.
