Ingredients

- 1 cup Sevai (vermicelli)
- 4 cups Milk
- 3/4 cup Sugar
- 1/2 teaspoon Cardamom powder
- 1 tablespoon Rose water
- 1/4 cup Almonds (sliced)
- 1/4 cup Pistachios (sliced)
- 1/4 cup Raisins
- 2 tablespoons Ghee (clarified butter)
Instructions
- Start by taking a pan and adding about 2 tablespoons of ghee. Heat the ghee over medium flame. Once the ghee is hot, add the sevai to the pan. Stir gently while roasting until it turns golden brown, about 5 to 7 minutes.
- While the sevai is roasting, pour 4 cups of milk into another pot and bring it to a boil on medium heat. Add 3/4 cup of sugar and stir continuously until dissolved.
- Once the sevai has turned golden, carefully add it to the pot of boiling milk and sprinkle in 1/2 teaspoon of cardamom powder. Reduce heat to low and simmer for 10 to 12 minutes, stirring occasionally.
- After the sevai is cooked, add 1 tablespoon of rose water, sliced almonds, pistachios, and raisins. Cook for another 5 minutes on low heat.
- Remove from heat and serve Nawabi Sevai warm or chilled, garnished with additional nuts if desired.
Notes
For a vegan version, substitute regular milk with almond or coconut milk and use oil instead of ghee.
