Ingredients
2 slices sourdough or whole-grain bread
1 cup mixed mushrooms (such as cremini, shiitake, or button), sliced
1/2 cup ricotta cheese
1 tbsp olive oil
1 garlic clove, minced
1/2 tsp thyme or rosemary (fresh or dried)
Salt and pepper to taste
1 tsp balsamic glaze (optional)
Fresh parsley or chives for garnish
Instructions
1. Toast the bread slices until golden and crisp.
2. Heat olive oil in a skillet over medium heat.
3. Add sliced mushrooms and cook for 4–5 minutes until softened and golden.
4. Stir in minced garlic, thyme, salt, and pepper; cook another 1–2 minutes.
5. Spread ricotta evenly over the toasted bread.
6. Top with the warm mushroom mixture.
7. Drizzle with balsamic glaze and garnish with fresh herbs.
8. Serve immediately while warm.
Notes
For extra flavor, mix a little lemon zest or parmesan into the ricotta.
