- 2 cups corn (fresh or frozen)
- 1 lb shrimp, peeled and deveined
- 1 cup feta cheese, crumbled
- 1/2 cup sour cream
- 2 tbsp mayonnaise
- 1 tsp chili powder
- 2 tbsp lime juice
- 2 tbsp cilantro, chopped
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Prepare the ingredients by washing and chopping cilantro, and ensuring shrimp are peeled and deveined.
- Heat the olive oil in a large pan over medium heat.
- Cook the shrimp for about 3-4 minutes until pink and cooked through, then remove from the pan.
- Cook the corn in the same pan for about 5-7 minutes until charred.
- Make the creamy sauce by whisking together feta, sour cream, mayonnaise, chili powder, lime juice, cilantro, salt, and pepper.
- Combine everything in the pan, stirring to heat through.
- Serve warm on its own or with rice, beans, or tortillas.
Notes
Choose high-quality shrimp for the best flavor. You can substitute yogurt for a lighter version of the sauce.
