Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup feta cheese, crumbled
  • 1/2 cup sour cream
  • 2 tbsp mayonnaise
  • 1 tsp chili powder
  • 2 tbsp lime juice
  • 2 tbsp cilantro, chopped
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Prepare the ingredients by washing and chopping cilantro, and ensuring shrimp are peeled and deveined.
  2. Heat the olive oil in a large pan over medium heat.
  3. Cook the shrimp for about 3-4 minutes until pink and cooked through, then remove from the pan.
  4. Cook the corn in the same pan for about 5-7 minutes until charred.
  5. Make the creamy sauce by whisking together feta, sour cream, mayonnaise, chili powder, lime juice, cilantro, salt, and pepper.
  6. Combine everything in the pan, stirring to heat through.
  7. Serve warm on its own or with rice, beans, or tortillas.
