These Matcha Pistachio Energy Balls are vibrant, nutty, and packed with natural energy. Made with matcha green tea, pistachios, and dates, they’re the perfect quick snack for focus, energy, and a touch of sweetness.
Ingredients
1 cup shelled pistachios
1 cup pitted Medjool dates
1 tbsp matcha green tea powder
1 tbsp honey or maple syrup (optional)
1 tbsp coconut oil
1/2 cup shredded coconut (optional, for rolling)
Pinch of salt
Instructions
1. Add pistachios to a food processor and pulse until finely ground.
2. Add dates, matcha powder, honey, coconut oil, and salt. Process until the mixture comes together into a sticky dough.
3. If it’s too dry, add a teaspoon of water at a time until it sticks when pressed.
4. Scoop about 1 tablespoon of the mixture and roll into balls.
5. Optionally, roll each ball in shredded coconut for coating.
6. Refrigerate for 20–30 minutes to firm up.
7. Store in an airtight container in the fridge for up to 1 week.
Notes
Use roasted pistachios for a deeper flavor.
Add a scoop of protein powder to make these post-workout bites.
You can freeze them for longer storage — just thaw a few before eating.
