A rich and creamy mashed potato casserole loaded with cheese, butter, and sour cream baked to golden perfection for the ultimate comfort side dish.
Ingredients
3 lbs russet potatoes, peeled and cut into chunks
4 tbsp butter
1 cup sour cream
1/2 cup milk
1 1/2 cups shredded cheddar cheese, divided
4 oz cream cheese, softened
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
2 tbsp chopped chives or green onions (optional)
Crispy bacon bits for topping (optional)
Instructions
1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
2. Boil potatoes in salted water for 15–20 minutes, until fork tender. Drain well.
3. Mash the potatoes with butter, cream cheese, sour cream, milk, garlic powder, salt, and pepper until smooth and creamy.
4. Stir in 1 cup of shredded cheddar cheese.
5. Spread the mashed potatoes evenly into the prepared baking dish.
6. Top with remaining 1/2 cup cheddar cheese.
7. Bake uncovered for 25–30 minutes, until hot and the cheese is melted and slightly golden.
8. Sprinkle with chopped chives or bacon bits before serving.
Notes
For an extra indulgent version, mix in cooked bacon pieces before baking.
You can make this casserole ahead of time — just cover and refrigerate, then bake when ready.
