Description
A creamy, flavor-packed chicken soup inspired by the famous ‘Marry Me Chicken’ with tender chicken, sun-dried tomatoes, garlic, herbs, and a rich Parmesan broth that’s absolutely irresistible.
Ingredients
2 tbsp olive oil
1 tbsp butter
1 lb chicken breast, diced
1 small onion, chopped
3 cloves garlic, minced
1/4 cup sun-dried tomatoes, chopped
1 tsp Italian seasoning
1/2 tsp crushed red pepper flakes (optional)
4 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups spinach leaves
Salt and pepper to taste
Fresh basil for garnish
Instructions
1. Heat olive oil and butter in a large pot over medium heat.
2. Add diced chicken, season with salt and pepper, and cook until lightly golden; remove and set aside.
3. In the same pot, sauté onion until softened, then add garlic and sun-dried tomatoes; cook for 1–2 minutes.
4. Stir in Italian seasoning and red pepper flakes.
5. Pour in chicken broth and bring to a simmer.
6. Return cooked chicken to the pot and simmer for 10–15 minutes.
7. Reduce heat and stir in heavy cream and Parmesan cheese until melted and smooth.
8. Add spinach and cook until wilted.
9. Taste and adjust seasoning as needed.
10. Serve hot, garnished with fresh basil and extra Parmesan.
Notes
Add cooked pasta or rice to make this soup even heartier.
You can substitute heavy cream with half-and-half for a lighter version.
Leftovers reheat beautifully — just add a splash of broth to loosen the soup.
