Ingredients

- 1 lb ground chicken
- 2 cups cauliflower rice
- 1 teaspoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup diced tomatoes
- 1 cup black beans, drained and rinsed
- 1 avocado, diced
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a skillet over medium heat.
- Add the ground chicken, stir frequently, and add chili powder, cumin, salt, and pepper. Cook until browned (7-10 minutes).
- In another pan, sauté cauliflower rice for 5-7 minutes until tender.
- Layer the base with cauliflower rice in a serving bowl.
- Top with the cooked chicken mixture evenly.
- Sprinkle black beans and diced tomatoes over the chicken.
- Add diced avocado on top and garnish with fresh cilantro.
- Serve immediately and enjoy!
