Description

A satisfying and flavorful low-carb burrito bowl combining chicken and cauliflower rice, perfect for a healthy meal.


Ingredients

  • 1 lb ground chicken
  • 2 cups cauliflower rice
  • 1 teaspoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup diced tomatoes
  • 1 cup black beans, drained and rinsed
  • 1 avocado, diced
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the ground chicken, stir frequently, and add chili powder, cumin, salt, and pepper. Cook until browned (7-10 minutes).
  3. In another pan, sauté cauliflower rice for 5-7 minutes until tender.
  4. Layer the base with cauliflower rice in a serving bowl.
  5. Top with the cooked chicken mixture evenly.
  6. Sprinkle black beans and diced tomatoes over the chicken.
  7. Add diced avocado on top and garnish with fresh cilantro.
  8. Serve immediately and enjoy!

Notes

Add a lime wedge for extra flavor when serving.
