Ingredients

  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • 1 1/2 cups unbleached flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup powdered sugar (for glaze)
  • 5 teaspoons lemon juice (for glaze)
  • Drops of vanilla extract (optional, for glaze)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Mix the unsalted butter and granulated sugar together in a mixing bowl until light and fluffy.
  3. Add the egg, vanilla, lemon juice, and lemon zest. Mix until combined.
  4. Combine the flour, baking powder, salt, and baking soda in a separate bowl.
  5. Mix the dry ingredients into the wet ingredients until just combined.
  6. Scoop the dough into 1 tablespoon-sized balls and place them on the baking sheet.
  7. Bake for about 7 minutes, or until the edges are lightly golden.
  8. Cool the cookies on the baking sheet for 10 minutes before transferring to a wire rack.
  9. Make the glaze by whisking together powdered sugar and lemon juice until smooth.
  10. Drizzle the glaze over the cooled cookies and allow to set.
