Description
Bright and buttery lemon raspberry bars with a tender shortbread crust, tangy lemon filling, and bursts of sweet raspberries perfectly balanced and irresistible.
Ingredients
1 cup unsalted butter, softened
1/2 cup powdered sugar
2 cups all-purpose flour
1/4 tsp salt
1 cup granulated sugar
3 large eggs
1/2 cup fresh lemon juice
1 tbsp lemon zest
2 tbsp all-purpose flour
1 cup fresh or frozen raspberries
Powdered sugar for dusting
Instructions
1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
2. In a bowl, cream butter and powdered sugar until smooth.
3. Mix in flour and salt until crumbly dough forms.
4. Press dough evenly into prepared pan.
5. Bake crust for 18–20 minutes until lightly golden.
6. While crust bakes, whisk sugar, eggs, lemon juice, lemon zest, and flour until smooth.
7. Pour lemon mixture over hot crust.
8. Scatter raspberries evenly over filling.
9. Return to oven and bake 22–25 minutes until center is set.
10. Cool completely, dust with powdered sugar, slice, and serve.
Notes
Fresh raspberries give the best texture, but frozen work without thawing.
Chill bars before slicing for cleaner edges.
Store refrigerated for up to 4 days.
