Description
Soft, chewy lemon pixie cookies bursting with bright citrus flavor, made with cake mix and real lemon for an easy, irresistible treat with a crackly powdered sugar finish.
Ingredients
1 box lemon cake mix
2 large eggs
1/3 cup vegetable oil
1 tbsp fresh lemon juice
1 tsp lemon zest
1/2 cup powdered sugar (for rolling)
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, mix cake mix, eggs, oil, lemon juice, and lemon zest until combined.
3. Chill dough for 20 minutes for easier handling.
4. Scoop dough and roll into balls.
5. Roll each ball generously in powdered sugar.
6. Place cookies on prepared baking sheet, spacing apart.
7. Bake for 9–11 minutes until set but still soft in the center.
8. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Do not overbake—cookies should look slightly underdone for best texture.
Add extra lemon zest for stronger citrus flavor.
Store in an airtight container for up to 4 days.
