A delightful dish combining tender chicken thighs with the fresh flavors of lemon and garlic, served with green beans.
Ingredients

- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- Juice and zest of 1 lemon
- Salt and black pepper, to taste
- 1 teaspoon dried thyme (or fresh)
- 1 pound green beans, trimmed
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken dry with paper towels.
- Mix salt, black pepper, lemon zest, and thyme in a small bowl.
- Rub the mixture all over the chicken thighs.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Place the chicken thighs skin-side down in the skillet.
- Sear them for about 5-7 minutes until golden brown.
- Flip the chicken thighs to skin side up.
- Add the minced garlic and butter to the skillet.
- Spoon the melted butter and garlic over the chicken.
- Squeeze the juice of one lemon over the chicken and add the lemon halves.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes.
- Blanch the green beans in boiling water for 3-4 minutes, then drain.
- Add the blanched green beans around the chicken in the skillet.
- Toss them lightly in the butter sauce.
- Return the skillet to the oven for 5 minutes.
- Garnish with fresh parsley and serve hot.
Notes
For meal prep, store leftovers in an airtight container. Can be frozen for up to three months.
