Lemon Garlic Butter Chicken Thighs

Description

A delightful dish combining tender chicken thighs with the fresh flavors of lemon and garlic, served with green beans.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • Juice and zest of 1 lemon
  • Salt and black pepper, to taste
  • 1 teaspoon dried thyme (or fresh)
  • 1 pound green beans, trimmed
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken dry with paper towels.
  3. Mix salt, black pepper, lemon zest, and thyme in a small bowl.
  4. Rub the mixture all over the chicken thighs.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat.
  6. Place the chicken thighs skin-side down in the skillet.
  7. Sear them for about 5-7 minutes until golden brown.
  8. Flip the chicken thighs to skin side up.
  9. Add the minced garlic and butter to the skillet.
  10. Spoon the melted butter and garlic over the chicken.
  11. Squeeze the juice of one lemon over the chicken and add the lemon halves.
  12. Transfer the skillet to the preheated oven and bake for 25-30 minutes.
  13. Blanch the green beans in boiling water for 3-4 minutes, then drain.
  14. Add the blanched green beans around the chicken in the skillet.
  15. Toss them lightly in the butter sauce.
  16. Return the skillet to the oven for 5 minutes.
  17. Garnish with fresh parsley and serve hot.

Notes

For meal prep, store leftovers in an airtight container. Can be frozen for up to three months.
