- 1 cup orzo pasta
- 2 cups low-sodium chicken broth

- 2 cloves garlic, minced
- 1 lemon (zested and juiced)
- 1 cup crumbled feta cheese
- 2 cups fresh spinach or kale
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt, pepper, and lemon zest.
- Heat the olive oil in a large skillet over medium heat.
- Cook the seasoned chicken for about 5-7 minutes on each side until fully cooked.
- Remove the chicken from the skillet and let it rest on a plate.
- Sauté the minced garlic for about 1 minute until fragrant.
- Add the uncooked orzo pasta and stir to toast for 1-2 minutes.
- Pour in the chicken broth and lemon juice; bring to a boil, then reduce to a simmer.
- Cover and cook for about 10-12 minutes until the orzo is tender.
- Add the fresh spinach or kale and cook until wilted, about 2-3 minutes.
- Combine the diced chicken and crumbled feta cheese into the skillet, stirring until combined.
- Adjust seasoning to taste before serving.
- Serve hot and garnish with fresh parsley.
Notes
For a heartier dish, consider adding cherry tomatoes or chickpeas, and feel free to substitute dark meat chicken if desired.
