  • 2 cups fresh spinach or kale
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt, pepper, and lemon zest.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Cook the seasoned chicken for about 5-7 minutes on each side until fully cooked.
  4. Remove the chicken from the skillet and let it rest on a plate.
  5. Sauté the minced garlic for about 1 minute until fragrant.
  6. Add the uncooked orzo pasta and stir to toast for 1-2 minutes.
  7. Pour in the chicken broth and lemon juice; bring to a boil, then reduce to a simmer.
  8. Cover and cook for about 10-12 minutes until the orzo is tender.
  9. Add the fresh spinach or kale and cook until wilted, about 2-3 minutes.
  10. Combine the diced chicken and crumbled feta cheese into the skillet, stirring until combined.
  11. Adjust seasoning to taste before serving.
  12. Serve hot and garnish with fresh parsley.

Notes

For a heartier dish, consider adding cherry tomatoes or chickpeas, and feel free to substitute dark meat chicken if desired.
